Pesto

Pesto is a traditional Italian sauce made by hand-crushing fresh basil, garlic, pine nuts, Parmesan cheese, and extra virgin olive oil. This method preserves the vibrant green color and delicate flavor of the ingredients, resulting in a rustic, intensely aromatic pesto with a coarse yet creamy texture. Each grind releases the essential oils and flavors, giving the pesto a depth that’s hard to achieve with a food processor. Ideal for tossing with pasta, spreading on bread, or drizzling over vegetables.

  • 2 cups fresh basil leaves
  • 2-6 cloves of garlic (depending on taste)
  • 1/2 tbs salt (adjust as needed)
  • 3/4 cup of Pine Nuts
  • 1 cup of Parmigiano Reggiano (finely grated)
  • Black Pepper to taste
  • Olive Oil
  1. In a pestle and mortar, create a paste with garlic and salt
  2. Add pine nuts and continue to incorporate in paste
  3. Add basil leaves
  4. Once paste is formed again, add cheese and olive oil
  5. Add more olive oil to meet desired consistency 
  6. Add Salt and Pepper to taste
