  • 2 tbsp mirin
  • 100 ml yuzu juice
  • 1-1/2 tbsp rice vinegar
  • 125 ml koikuchi shoyu (normal)
  • 5 g katsuobushi (bonito)
  • 10 g dried kombu
  • Mango Slices
  1. Heat mirin and burn off alcohol
  2. Mix with all other ingredients
  3. Rest in fridge for minimum 24 hrs (best when 2-3 days)
  4. Strain and store (use within 3 months if sealed)
  5. Add mango slices, and blend together into fine paste
