Korean Spinach (시금치나물)

Korean Spinach or Sigeumchi Namul (시금치나물) is a traditional Korean spinach side dish made with blanched spinach seasoned with sesame oil, garlic, soy sauce, and sesame seeds. Light, earthy, and aromatic, it’s a staple in Korean meals and often found in bibimbap or served as banchan.   • 1/2 lb spinach
  • 2 tsp sesame oil
  • 1 tsp toasted sesame seeds
  • 1 clove garlic (minced)
  • 1 green onion (chopped)
  • Salt and Pepper to taste

  1. Bring water to boil with 1/2 tbs salt
  2. Add spinach and blanch for 30 secs
  3. Remove from heat and sit over for 1 min
  4. Remove spinach and rinse under cold water
  5. Mix with garlic, green onions and sesame oil
  6. Add Salt & Pepper to taste
