  • 1/2 cup parsley (leaves only)
  • 1/3 cup cilantro (optional)
  • 4 cloves garlic
  • 1 shallot
  • 1 tsp dried oregano
  • 2 tsp red pepper flakes
  • 3 tbs red wine vinegar
  • 1 tsp salt
  • 1/2 tsp blk pepper
  • 2/3 cup Extra-Virgin Olive Oil (EVOO)
  • Lemon Juice to taste
  • Xanthan gum (optional - used as a thickening agent)
  1. Finely chop parsley, cilantro, garlic and shallots
  2. Combine with rest of ingredients
  3. Adjust consistency with EVOO
  4. Adjust flavor profile with lemon and/or red wine vinegar
