- 1/2 cup parsley (leaves only)
- 1/3 cup cilantro (optional)
- 4 cloves garlic
- 1 shallot
- 1 tsp dried oregano
- 2 tsp red pepper flakes
- 3 tbs red wine vinegar
- 1 tsp salt
- 1/2 tsp blk pepper
- 2/3 cup Extra-Virgin Olive Oil (EVOO)
- Lemon Juice to taste
- Xanthan gum (optional - used as a thickening agent)
- Finely chop parsley, cilantro, garlic and shallots
- Combine with rest of ingredients
- Adjust consistency with EVOO
- Adjust flavor profile with lemon and/or red wine vinegar
