Budaejjigae (부대찌개)

BudaeJjigae (부대찌개) also known as Korean Army Stew, is a bold, comforting hot pot dish born from post-war ingenuity. It combines Korean spices like gochujang and kimchi with American ingredients such as Spam, hot dogs, and baked beans, all simmered in a rich, spicy broth. Topped with ramen noodles, tofu, and melty cheese, it’s a hearty, flavor-packed fusion perfect for sharing.

MAIN
  • 4 cups Stock
  • 1/2 cup Ripened Kimchi (chopped)
  • 50 g 가래떡 (Korean Rice Cake)
  • 2 stalks Green Onions
  • Spam
  • Sausages
  • Tofu
  • 1 pkg Plain Instant Ramen
  • Shiitake Mushrooms
  • Enoki Mushrooms (optional)
SAUCE
  • 3 tbsp 고추가루 (Korean Hot Pepper Flakes)
  • 1.5 tbsp 고추장 (Korean Red Chili Paste)
  • 3 tbsp Mirin
  • 1.5 tbsp Soy Sauce
  • 1.5 tbsp Garlic (minced)
  • Ground Black Pepper

  1. Combine SAUCE ingredients and set aside
  2. Place MAIN ingredients (except ramen, rice cake, green onions) in a shallow pot, and pour stock in
  3. Place sauce in the middle of the pot and turn on heat
  4. Once stock is boiling, add the remainder of the ingredients that were exempted in Step 2
  5. Once noodles have been cooked, reduce low heat and serve
